[dropcap]U[/dropcap]sai hiatus setahun akibat pandemi, ajang penghargaan World’s 50 Best Restaurants kembali digelar tahun ini. Dalam hajatan yang dijuluki “Oscar dunia kuliner” ini, Noma terpilih sebagai restoran terbaik.
Ini merupakan kelima kalinya Noma menyabet trofi utama. Prestasi serupa diraihnya pada 2010, 2011, 2012, serta 2014. Tahun ini, Noma merebut gelar terbaik dari Mirazur, resto di Menton, Prancis, yang <a href="https://destinasian.co.id/restoran-terbaik-di-dunia-2019/" target="_blank" rel="noopener">berjaya di 2019</a>.

Noma, resto progresif yang berlokasi di Kopenhagen, dipimpin oleh koki Rene Redzepi. Tempat ini menyajikan menu musiman: hasil laut di musim dingin, sayur-mayur di musim panas, hasil hutan di musim gugur.
“Noma bisa dibilang merupakan restoran paling berpengaruh di generasinya,” jelas William Drew, Content Director The World’s 50 Best Restaurants, dalam siaran persnya. Restoran ini, tambahnya, “menciptakan standar baru dalam hal riset dan pencarian bahan masak, serta pengembangan dan presentasi hidangan.”

Posisi terbaik kedua tahun ini dihuni Geranium, juga berlokasi di Kopenhagen. Sementara medali perunggu digondol oleh Asador Etxebarri di Atxondo, Spanyol—mengulang prestasinya di 2019.

Selain nama-nama lama, World’s 50 Best Restaurants 2021 berhasil ditembus sejumlah wajah baru. Total ada delapan resto yang baru pertama kalinya masuk daftar elite ini, contohnya Lido 84 (Italia) dan Wolfgat (Afrika Selatan).

Dari Asia, ada delapan resto yang masuk daftar 50 terbaik, di antaranya Odette (Singapura), The Chairman (Hong Kong), serta Den (Jepang). Satu nama senior yang absen ialah Gaggan (Thailand). Sempat bertengger di posisi keempat pada 2019, resto ini ditutup sang koki, yang kemudian melansir gerai baru bernama Gaggan Anand.  
World’s 50 Best Restaurants 2021 berisi restoran di 26 negara. Spanyol dan Amerika Serikat memiliki wakil terbanyak, masing-masing enam resto. Sementara Italia menempatkan empat wakil.

Lagi-lagi, tak ada wakil dari Indonesia. Sejak dirintis pada 2002, ajang garapan William Reed Business Media ini memang tak pernah mencantumkan resto asal Indonesia.
Namun begitu, ada satu nama dari Indonesia yang sukses menyabet “penghargaan turunan.” Will Goldfarb, koki Room4Dessert, diganjar The World’s Best Pastry Chef Award. Restorannya yang berlokasi di Ubud menghidangkan aneka menu pencuci mulut berkonsep kontemporer.
